Quinoa And Tofu.
Ingredients.
1 cup vegetable stock
1 cup quinoa
8 ounces extra-firm tofu
2 teaspoons olive oil
1 teaspoon hing
1 medium-size red pepper, sliced
Preparation.
Heat the vegetable stock in a saucepan until boiling. Add quinoa and reduce heat to simmer.
Simmer for about 15-20 minutes, or until quinoa is light and fluffy.
While quinoa is cooking, drain the tofu on paper towels ( 15-20 minutes), cut into cubes.
In a medium-size skillet, heat oil and saute pepper for about 5 minutes.
Add cubed tofu and the hing, and continue to saute for another 3-4 minutes.
Add the cooked quinoa and pepper.
Toss until blended.
