THE HIGHER TASTE

Tofu Jambalaya.

Ingredients.
100g/4oz tofu
45ml/3tbsp olive oil
5ml/1tsp hing
2 bay leaves
100g/4oz short grain rice
5ml/1tsp salt
5ml/1tsp turmeric
10ml/2tsp tomato purée
500ml/17fl oz hot water
4 red peppers, chopped
1 sweet potato, cubed
1 carrot, chopped
75g/3oz tin sweetcorn
100g/4oz boiled black beans

Preparation.
sauté the tofu in a pan, set aside.

Heat the olive oil in a large frying pan.

Add the chopped peppers and bay leaves and sauté.

Add the rice and mix together.

Add the salt, hing, turmeric and tomato purée.

Add the water and allow to come to the boil.

Add all the vegetables, beans and tofu, cover and cook on a low heat until the rice is cooked.
