Tofu, Apricot and Rice Cream.  	
 
  
Ingredients. 
8oz / 225g  apricots  
1pt / 600ml water  
12oz / 350g cooked brown rice  
1tbsp malt  
1 block of tofu	 
8floz / 225g apple juice  
½ tsp cinammon  
orange rind and pine kernels to decorate 
 
 	   
Preparation.  
 Soak the apricots for an hour then boil until soft and most of the pint of water has evaporated. Remove the stones.  
 Blend the apricots, rice, malt, tofu, apple juice and cinammon in a blender or food processor.  Place in bowls and decorate with orange rind and pine kernels.
