THE HIGHER TASTE

Blueberry Streusel Cobbler.

Servings: 6-8
Prep Time: 15 minutes plus baking time.
Preheat: 325ºF (160ºC)

Another coup for comfort food… this one with everyone’s favourite summer berries.

What You'll Need
2 cups (500 mL) fresh or frozen blueberries, rinsed
1 can (300 mL) Regular or Low Fat condensed milk sweetened condensed milk
2 tsp (10 mL) grated lemon rind
3/4 cup (175 mL) cold butter
2 cups (500 mL) biscuit baking mix, divided
1/2 cup (125 mL) firmly packed brown sugar
2 tbsp (30 mL) cold butter
1/2 cup (125 mL) chopped nuts

What's Next:
1. Combine blueberries, condensed milk and lemon rind; set aside.

2. In another bowl, cut 3/4 cup (175 mL) butter into 1 1/2 cups (375 mL) biscuit mix until crumbly; add blueberry mixture. Spread into parchment paper-lined 9 x 9 inch (3 L) baking pan.

3. In small bowl, combine remaining 1/2 cup (125 mL) biscuit mix and sugar; cut in remaining 2 tbsp (30 mL) butter until crumbly. Stir in nuts. Sprinkle mixture over cobbler.

4. Bake in preheated 325°F (160°C) oven 1 hour and 10 minutes or until golden. Serve warm with vanilla ice cream, if desired.
