Vanilla Pecan Pralines.  	
 
  
Ingredients. 
2 cups granulated sugar  
1/2 cup corn syrup  
1/2 cup water  
2 cups pecan halves  
1/4 cup butter  
1 tablespoon vanilla extract  
 
 	   
Preparation.  
Butter a baking sheet and set aside.  
Heat sugar, syrup and water in a heavy saucepan until sugar is dissolved. Add pecans and bring to a boil, stirring occasionally, until it reaches the soft-ball stage .  Remove saucepan from heat and add butter and vanilla; let cool. 
Beat with a  spoon until mixture gradually changes to an opaque color and becomes creamy. Drop by tablespoonfuls onto a buttered baking sheet and allow to harden.
