THE HIGHER TASTE

Chilled Mint and Cucumber Soup.

Ingredients.
1 cucumber, peeled and chopped
1 teaspoon hing
1 1/4 cups soy yogurt
3 tablespoons soy milk
2 tablespoons fresh mint, finely chopped
1 teaspoon ground coriander
Salt and pepper
Diced cucumber, to garnish
Sprigs of mint, to garnish

Preparation.
Puree all the ingredients together in a liquidiser, and then transfer to a large bowl.

Season well and chill the soup thoroughly in the refrigerator before serving.

Garnish with mint and diced cucumber.
