THE HIGHER TASTE

Rice Pilaf with Pecans.

Yield: 6 Servings

Ingredients:
1 Carrot; cut into thin strip
1 ts hing
1 tb Olive oil
2 1/2 c vegetarian broth
1/2 c Orange juice
1 1/2 c Uncooked long grain rice
1/4 c Golden raisins
1 1/2 ts Sugar
1/2 ts Salt
3 tb Chopped pecans

Preparation:
Saute carrot about 5 minutes in hot oil. Add vegetarian broth, orange juice, rice, hing, raisins, sugar and salt.

Cover, reduce heat, and simmer until liquid is absorbed, about 20 minutes.

Sprinkle with nuts.
