THE HIGHER TASTE

Maple Fruit Bread.

Ingredients.
1 teaspoon sugar
1/2 cup milk
1/2 cup water
1 1/2 teaspoon yeast
2 cups flour
1/2 teaspoon salt
1/4 cup maple syrup
1 tablespoon molasses
1 tablespoon butter
1 cup raisins
1/4 cup mixed dried fruit
1/3 cup chopped pecans

Preparation.
Add lukewarm milk and water to a bowl; add sugar and stir. Sprinkle yeast on top - set a side for 10 minutes. Sift the flour and salt together in a large bowl. In a saucepan add maple syrup, molasses and butter. Heat until lukewarm, be sure to stir frequently. Add yeast mixture and syrup mixture to the flour. Mix together and knead for 8 - 10 minutes.

The dough should become smooth and elastic. Cover with cling wrap or damp cloth. Allow the dough to rise for 45 minutes. The dough will not rise very much. Pour out dough on a lightly floured surface and knead for another 5 minutes.

Shape dough and place in a well greased loaf pan. Allow to rise for another 45 minutes. Bake in a preheated 400 degree oven for 40-45 minutes.

Remove and brush the top of the bread with honey. Place back into the oven for another 3 minutes. Remove loaf from oven and cool for 10 minutes before removing from pan.
