THE HIGHER TASTE

Black Rye Bread.

Ingredients.
1 teaspoon sugar
1 1/4 cups lukewarm water
1 package active dry yeast
1 1/2 cups whole wheat flour
2 cups rye flour
1 teaspoon salt
1 teaspoon caraway seeds
2 teaspoons oil
2/3 cup plain yogourt

Preparation.
In a bowl dissolve the sugar and yeast in the lukewarm water. Set a side for 6 - 8 minutes till foamy. In a large bowl sift the flours, salt and caraway seeds together. If anything remains in the sieve just dump it into the bowl. Now, mix in the oil, yeast and yogourt and mix together. Knead the dough for 10 minutes.

Place the dough into a greased bowl and cover with plastic wrap and allow to rise for 1 hour. Grease a 5 x 9 loaf pan. Pour out dough onto a lightly floured surface and knead for 5 minutes.

Shape the dough and place into the loaf pan. With a fork or knife prick the top of the dough. Cover with plastic wrap again and allow to rise for 30 minutes.

Preheat oven to 400 degrees. Bake for 45 minutes. Then remove the loaf from the pan and bake for another 5 minutes. Cool on a wire rack.
