THE HIGHER TASTE

Apricot Muffins.

Ingredients.
2 cups sifted all-purpose flour
2 1/2 teaspoons baking powder
2 tablespoons sugar
3/4 teaspoon salt
1/2 cup chopped dried apricots
1/2 cup vegetable shortening
1 teaspoon yogourt
3/4 cup milk

Preparation.
Sift together flour, baking powder, sugar and salt; cut in shortening and stir in dried apricots.

Combine yogourt and milk; add to flour mixture. Stir just until dry ingredients are moistened.

Fill greased muffin pans about 2/3 full. Bake at 400° for 20 to 25 minutes.

Makes about 10 muffins.
