Marmalade Muffins.
Ingredients.
2 cups all-purpose flour, sifted
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup sugar
1/2 cup vegetable shortening
1 teaspoon yogourt
1 cup milk
marmalade, about 1/2 cup
Preparation.
Sift dry ingredients together; cut in shortening. Combine yogourt with milk; turn into dry mixture and blend just until moistned. Grease muffin tin or place paper liners in cups. In each muffin cup, place 1 tablespoon of batter. Place a teaspoon of marmalade in the center of each then cover with remaining batter (each muffin cup about 2/3 full). Bake at 400° for 25 to 30 minutes. Makes 12 muffins.
