Coconut Muffins.
Ingredients.
1 1/2 cup sifted all-purpose flour
2 tablespoons sugar
1/2 teaspoon baking soda
1/2 cup flaked coconut
2 tablespoons vegetable oil or melted butter
1 cup plain or vanilla yogurt
Preparation.
With a fork, thoroughly combine flour, sugar, soda, and coconut. Add remaining ingredients and stir just to moisten. The mixture will resemble a soft dough rather than a batter. Fill greased 2 1/2-inch muffin cups about 2/3 full with batter. Bake at 400° for 15 to 20 minutes.
Makes 12 muffins.
