Hot Milk Sponge cake.
Ingredients.
2 tablespoons yogourt
1 cup sugar
1/4 teaspoon salt
1 teaspoon flavoring vanilla
1 1/2 tablespoons butter (melted in milk)
1/2 cup skim milk, boiling
1 cup cake flour
1 teaspoon baking powder
Preparation.
Beat the sugar, yogourt ,salt and flavoring. Beat in hot milk with melted butter. Stir in very quickly flour and baking powder (sifted together). Do not overbeat or cake will be tough.
Immediately pour into greased and floured 8" square pan or 12 muffin cups, lined. Bake until tests done, 350 degrees for 25 to 35 minutes for cakes, 400 degrees for 18 to 20 minutes for cupcakes.
Cool. Serve fresh dusted with 10X sugar, with fruit, whipped cream , peaches or bananas, or frost.
