Orange cake.
Ingredients.
1 cup flour
1 cup whole-wheat cake flour
1 1/2 tbsp baking powder
1 tsp salt
1/2 cup agave nectar
1 1/2 (10.3oz) packages silken tofu
2 tbsp orange juice
2 tbsp grated orange peel
Preparation.
Preheat oven to 350F and lightly grease a loaf pan.
Whisk flours, baking powder and salt.
In food processor or blender, combine agave nectar, tofu, juice and peel until smooth.
Add tofu mixture to flour mixture and beat until combined.
Bake 30 to 35 minutes.
Cool cake 10 minutes, then remove from pan and cool on wire rack.
